Clocking in at a mere 46 calories each, my 4-ingredient chocolate peanut figgy truffles are vegan, gluten-free, healthy, dead simple to make, and have no added sugar. Put some in your tum today!

Truffles may be expensive to buy, and therefore, seemingly decadent but y’know what? They are so incredibly easy to make. In fact, over the years, I’ve made gazillions of ‘em, precisely because they’re so darned expensive in the shops, yet so simple to throw together in the kitchen.

One December, I quite literally made hundreds of truffles, and gave them to family members as Chrimbo pressies.

In fact, that December in 2010 was the last time I'd made any until a couple of years ago. Why? Because ordinarily, the trouble with truffles (as opposed to The Trouble With Tribbles), is that they are sneaky, tempting, little balls of waist-enlargement, and to be completely honest with you, I just didn’t have the willpower not to eat them.

Or, as someone once famously said,

It’s not the willpower, it’s the won’t power

(I don’t know who it was – let me know in the comments if you do.)

Fortunately, my truffles only contain 46 calories each, so not much willpower is needed. Also, as I’ve got older, and, some might argue, wiser, my sweet tooth has become more of a savoury tooth, and on the odd occasion I do crave sweetness, a little is more than enough.

Soak the semi-dried figs in some boiling water, until they have become plump and soft.

Drain, and then process until the figs form a thick, yummy, gooey paste.

Place bite-sized balls onto a lined baking tray, and freeze for a short while, then add blobs of peanut butter on top, and return to the freezer while you melt the chocolate and coconut oil together.

Coat each truffle with melted chocolate.

Try to resist eating them all at once.

Ingredients

Instructions

  • Soak the semi-dried figs in some boiling water for 30 minutes, until they have become plump and soft.

  • Drain well, and then process until the figs form a thick paste.

  • Place bite-sized balls onto a lined baking tray, and freeze for 20 minutes.

  • Add blobs of peanut butter on top of each truffle, and return to the freezer for 10 minutes.

  • While the truffles are re-hardening, melt the chocolate and coconut butter together.

  • Remove the truffles from the freezer, and then coat each one with the melted chocolate. The coldness of the truffles will make the chocolate harden upon contact, forming a lovely, crisp chocolatey shell.

  • Store the truffles in the ‘fridge if you’re going to be having them on the day you make them, otherwise, keep in an airtight container in the freezer (for up to three months), removing them 15 minutes before you want to serve.

Notes

  1. Or peanut butter powder
  2. 60-70% cacao solids is best
  3. Or use coconut oil - virgin or refined, it's up to you.

    Have you ever tried this with dates? I have seen so many Vegan date caramel recipes and have a ton of dates in my freezer right now so these would be perfect.

    Oh my word, these look so good! I usually make my home-made truffles with a blend of dates, nuts and cacao powder, so I'd love to branch out and try something new. I've seen dried figs in the shops but I'm not sure about semi-dried. Do you have any ideas where to buy them in the UK? Thanks Nico! p.s. I'm loving your Insta photos of Romania.       The Waitrose Love Life Soft Figs are very similar, Sharon, although they are larger than the Croatian ones. They'll work just as well though. Truffles with dates and cocoa powder are lovely, aren't they? Do you use cashews? I've been experimenting with other nuts recently but I always come back to cashews because they're just so creamy. Mind you, if I can find macadamias that don't cost the earth, I'd like to play around with those too.

    Mmm aren't homemade truffles just the best! I have to confess that my halo certainly isn't as shiny as yours and I would scoff more than my fair share of these Nikko. I usually make ours with somesort of ganache filling, but i love your idea of using figs and peanutbutter in them!
