This luscious lemon yogurt recipe is actually the invention of my son. We both LOVE lemon desserts, but who needs a dessert when you can quickly mix up this Luscious Lemon Yogurt! Even if you’re not a big fan of yogurt, you’ll be amazed at the way the zing of the lemon dances with the twang of yogurt…it’s a little party in your mouth! I keep wanting to call this Luscious Lemon Pudding. When you make it, you’ll see why.

This is optional, but I love how it boosts the subtle lemony yellow color. PLUS, it’s a fabulous herbfor health! I’ve been sort of obsessed with adding it to foods since it helped my kids in their recovery from whooping cough a few years back.Luscious Lemon Yogurt Recipe - Gwen's Nest (5)

It’s widely used in Indian curries, and coincidentally as the yellow colorant in mustard. Which is how we’re going to use it today. It’s an optional ingredient, and doesn’t really add any flavor for how little we use. It’s just fun to turn a lemony treat a creamy yellow color with just a dash of this amazing herb. It only takes a TINY pinch to do the trick- you really don’t want to add enough to flavor your yogurt. And speaking of flavoring your yogurt…

This is my secret weapon to AMAZING flavor…just *one* tiny drop drops an atomic bomb of lemon flavor.

Now, I *know* how potent and powerful essential oils are. I get it. I’m not a proponent of using them in water, but so long as the oils are fully dispersed in a recipe, there IS a safe amount of use. I give more info on essential oil safety as flavorings.

stir them together, and taste. I told you this was easy!!! I always like to add a pinch of salt, and then adjust the sweetness. You can adjust the flavor and sweetness levels to hit all the right notes for you. Your finished product should be perfectly sweet, sour, tangy, tart, and amazingly lusciously lemony! And pudding-ish.

THIS is how I ate my luscious lemon yogurt. As a sauce, over the top of a low carb lemon poppyseed muffin. SUPER YUM.I also have aspirations of freezing this in popsicle molds, and layering it over an almond meal ‘graham cracker’ type crust.

This recipe yields about 2 servings, but you could really eat the whole thing yourself if you hide from the kids. Not that I would EVER do such a thing. This is just an amazing combination...as good or better than a lemonade pie. But it's fat free, sugar free, and WAY better for you! Enjoy!

Ingredients

  • 1 cup 0% Greek yogurt
  • juice of one fresh lemon
  • pinch of salt
  • 1-1½ teaspoons THM Sweet Blend, *or* 2½ teaspoons of gentle sweet *or* stevia extract to taste, *OR* 1½-2 packets of your favorite sweetener to taste
  • Dash of turmeric, optional for color

Instructions

  1. Add all ingredients to a bowl.
  2. Blend.
  3. Taste and adjust salt/sweet/tart flavors.
  4. Hide in closet and devour.

Notes

You may sub fat free, strained homemade yogurt. You may also sub bottled lemon juice, but I can't look if you do. If you REALLY love lemon, add one drop of a food quality lemon essential oil to your yogurt. I love the NOW brand for price and quality.
